Gluten-free Banana Quinoa Cookies

Gluten-free Banana Quinoa Cookies
Mix in blender:
2 1/2 bananas
1/4 cup coconut oil
1/4 cup date or coconut sugar
1 teaspoon vanilla
2 organic free-range eggs
Add and let sit a few minutes:
1/2 cup dried cranberries
1/2 cup quinoa flakes
Combine in large bowl:
1 cup almond flour
1/2 cup unsweetened coconut
1/2 cup rice flour
1 teaspoon baking powder
1/4 teaspoon salt
Drop blobs onto ceramic baking tray and press down slightly.
Bake 375 F for 18-20 minutes.
Makes about 20 cookies.

Gluten-Free Breakfast Cookies with Canahua Grains

***For extra healthy breakfast cookies replace 1/2 cup rice flour with 1/2 cup flax AND 1/2 cup ground Canahua grain (you can grind the grains in a coffee grinder).
