Foodie Friday Recipe: Sugar-Free Power Cookies

I used to have a reputation for having a sweet tooth. When I was younger I could scarf down 7 Nanaimo Bars in one shot. As a young child I would make packages of jello and hide them in the basement to gel.

I was finally able to kick my sugar addiction a couple years ago. Eating balanced meals, lots of veggies, and quitting alcohol have helped!

I love developing recipes using maple syrup and honey. Recently I started using Stevia for a completely sugar-free alternative. Here is my latest recipe for super healthy sugar free Power Cookies!

Sugar-free Power Cookies
Blend in food processor:
2 bananas
1/4 cup coconut butter or oil
12 drops stevia
2 organic free range eggs
1 teaspoon vanilla
Add:
1/4 cup quinoa flakes
1/2 c raisins
1/3 cup oats
2 Tbs each flax & chia & hemp
Let sit 5-10 minutes.
Combine in bowl:
1/3 cup almond flour
1/3 cup spelt flour
1/2 tsp baking powder
1/4 tsp Himalayan salt
1 tsp cinnamon
Drop by tablespoon on ceramic baking sheet. Spread slightly, Bake 375 degrees F for 20 minutes. Makes 12 power cookies.
