05 May Foodie Friday: Raw Vegan Cookie Dough Bites
Sometimes you just need a little treat during the day to pick you up.There are thousands of energy ball recipes in the web. I combined a few ideas and came up with a super easy one that can be tweaked to suit what you have in your kitchen!
You can keep them in your freezer to have on hand for unexpected guests. Perfect for when you have a chocolate craving. You can omit the nuts and put them in your kids’ lunch!
These little mounds of goodness are so decadent that eating them tastes and feels like eating cookie dough!
Raw Vegan Cookie Dough Bites
1 cup raw seeds or nuts (I used 1/4 cup sunflower seeds, 1/4 cup ground flaxseed, 1/2 cup pumpkin seeds)
1/4 cup cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon sea salt or Himalayan salt
1 cup Medjool dates, pitted and chopped
1-2 Tablespoons water
Blend nuts and seeds in the food processor until coarsely ground. Add rest of the ingredients and blend just until mixture forms a ball (adding water one Tablespoon at a time).
Scoop up spoonful of mixture and form 16 small balls. Roll in cocoa powder, unsweetened coconut or hemp hearts. Place on waxed paper. Refrigerate.
