20 May Foodie Friday: Homemade Vegan Sugar-free Ice Cream
What can you do with over-ripe bananas? I usually make cookies or cut them up and freeze them for smoothies.
When I was in Costa Rica I had vegan ice cream made with frozen blended bananas.
I made home-made ice cream the other day. I had made hemp milk with hemp hearts so already had the pulp and milk on hand.
The result was delicious. I served it with granola on top. You can tweak the basic recipe with what you have in your kitchen. Frozen berries make a lovely sorbet. Basically it’s like making a very thick smoothie.
Vegan Banana Ice Cream
1 banana, cut in 1 inch pieces and frozen
1-2 Tablespoons hemp pulp (left from making hemp milk)
1/4 cup hemp milk***
Blend all ingredients in the food processor. Serve immediately.
***Hemp Milk: Soak 1/4 cup hemp hearts in 1 cup water for a few hours. Blend in a food processor or Vitamix. Drain in a net fabric nut milk or paint strainer bag and squeeze out all the ‘milk’. Reserve pulp for recipes or use as a garnish on salads, soups or cereal.
Optional add-on ingredients for ice cream: frozen berries, cocoa powder, coconut, chia seeds, ground flax seeds, vanilla extract, almond extract, almond pulp, almond milk, coconut milk, cinnamon.
Start by StARTing Tip: Try your hand at making vegan ice cream. Keep frozen bananas on hand for when you get a sweet tooth craving! Experiment with different ingredients.
