04 Aug Avocado Grilled Cheese-less Sandwich
Finally a vegan alternative to the iconic grilled cheese sandwich. I had considered making something with nutritional yeast, but realized it would be messy and would stink my family members out of the house. Here is a super simple, delicious and nutritious solution to the comfort food classic.
Grilled Cheese-less Sandwich with Avocado
2 slices of regular or gluten free bread (I love Inewa Kamut Brioche…low on gluten)
salt and pepper to taste
1/2 ripe avocado
Spread vegan butter on one side of each slice of bread and place in heated skillet or fry pan. Heat until browned. You may brown on both sides if desired. Turn off heat. Add thinly sliced avocado to non-buttered side of one slice of bread. Sprinkle with himalayan salt and pepper to taste. Cover with other slice of bread (buttered side out). Serve immediately.
The Inewa Kamut Brioche is delicious with a nice light texture and low gluten. Perfect for this recipe.
