15 Aug Raw Vegan Cauliflower Sushi
I was inspired by Kate Flowers to create raw vegan sushi using cauliflower instead of rice. Be sure to check out her channel for some great recipes and inspiration. She used raw nori sheets, but I didn’t have any so I used the regular toasted nori sheets that you can buy in most grocery stores. She also used avocado instead of tahini to stick the rice together, which I’ll have to try sometime!
Raw Vegan Cauliflower Sushi
2 cups of cauliflower florets (about 1/2 medium cauliflower)
1/4 cup tahini
Himalayan salt to taste
3-4 nori sheets
julienne red peppers
optional veggies: avocado, cucumber, carrots, mango, mushrooms, sprouts, etc.
optional fresh herbs: mint, basil
Pulse cauliflower florets in food processor with tahini and salt until texture of course rice.
Lay nori sheet on counter and spread cauliflower mixture across the width of the nori until about 2/3 way up. Lay veggies and herbs in a line across the width of the nori about 1/3 way up. With a sushi mat OR by hand roll the nori snuggly and seal with a bit of water if necessary. Wrap in saran wrap to cut later or cut immediately in one inch slices with a very sharp (not serrated) knife.
Serve with pickled ginger, sushi dipping sauce and wasabi paste.
