04 Jan Vegan Cream of Celery Soup
What happens when you go shopping after the holidays, buy a head of celery and you already have one at home? You make cream of celery soup! Here is a quick and easy recipe that can be used with a variety of veggies. Just sub broccoli, cauliflower, carrots, sweet potatoes, mushrooms, etc. for the celery as desired.
Vegan Cream of Celery Soup
1 medium onion
3-5 cloves garlic
1 medium head of celery
Salt and pepper
2 Tablespoons vegan butter
2 Tablespoons flour
2 cups almond milk (or other dairy free milk)
Sauté onions and garlic until translucent. Add celery, cover and simmer while you prepare the milk base.
In a saucepan melt butter and add flour and cook for one minute. Gradually add vegan milk and cook until thick. Add celery mixture and season with salt and pepper to taste. Transfer to a food processor and blend slightly until a course texture. Return to saucepan and serve immediately.
