Vegan Cream of Carrot & Kale Soup

Vegan Cream of Kale & Carrot Soup

Sauté:
1 small onion
2 cloves garlic
Add and cook 3-4 minutes:
1 large grated carrot
2 kale leaves
Add and blend in food processor:
1 cup unsweetened almond milk
Return to saucepan and add
1 teaspoon of cornstarch mixed
with 1 Tablespoon almond milk
Simmer a couple minutes until thick. Add Braggs liquid soy seasoning and pepper
to taste.
Serve and garnish with 1 tablespoon of nutritional yeast and sprinkle with hemp hearts.
To eat, mix in the nutritional yeast for a nice cheesy flavour.
